Greek winter salad

This Greek winter salad is not only a feast for the eyes, but also a real feast for the palate. Perfect for a light dinner for two.


Ingredients for 2 people:

  • 150 g chicken breast
  • 1 tsp Minos Organic Extra Virgin Olive Oil
  • 100 g spring onions, roughly chopped
  • 100 g red cabbage, finely shredded
  • 1 yellow pepper, cut into strips
  • 100g cherry tomatoes, halved
  • 1 avocado, thinly sliced
  • 1 tbsp sesame
  • 1 tbsp linseed
  • A handful of walnuts (approx. 30 g), finely chopped

Preparation time: approx. 45 minutes

Difficulty level: easy

    1. Season the chicken breast with salt, pepper and Minos Organic Extra Virgin Olive Oil . Cook in a preheated oven at 180 degrees Celsius for about 20-25 minutes until fully cooked. Then cut into thin slices.
    2. Prepare the spring onions, red cabbage, yellow peppers, cherry tomatoes and avocado and arrange them on plates together with the chicken breast in a large salad bowl.
    3. Sprinkle sesame seeds, linseed and chopped walnuts over the salad.
    4. In a small bowl, mix Minos Organic Extra Virgin Olive Oil , lemon juice, salt, pepper and a touch of honey if desired.
    5. Pour the dressing over the salad and mix gently until the ingredients are evenly coated.
    6. Serve immediately and enjoy the wintery taste of this fresh and hearty salad with tender chicken.

    Tip: Complement your meal with Greek hummus and fresh bread. The creamy consistency of the hummus and the crispiness of the bread go perfectly with this winter salad.
