This Greek winter salad is not only a feast for the eyes, but also a real feast for the palate. Perfect for a light dinner for two.
Ingredients for 2 people:
- 150 g chicken breast
- 1 tsp Minos Organic Extra Virgin Olive Oil
- 100 g spring onions, roughly chopped
- 100 g red cabbage, finely shredded
- 1 yellow pepper, cut into strips
- 100g cherry tomatoes, halved
- 1 avocado, thinly sliced
- 1 tbsp sesame
- 1 tbsp linseed
- A handful of walnuts (approx. 30 g), finely chopped
- 3 tbsp Minos Organic Extra Virgin Olive Oil
- Juice of one lemon
- Salt and pepper to taste
- Optional: A touch of honey for a sweet note

- Season the chicken breast with salt, pepper and Minos Organic Extra Virgin Olive Oil . Cook in a preheated oven at 180 degrees Celsius for about 20-25 minutes until fully cooked. Then cut into thin slices.
- Prepare the spring onions, red cabbage, yellow peppers, cherry tomatoes and avocado and arrange them on plates together with the chicken breast in a large salad bowl.
- Sprinkle sesame seeds, linseed and chopped walnuts over the salad.
- In a small bowl, mix Minos Organic Extra Virgin Olive Oil , lemon juice, salt, pepper and a touch of honey if desired.
- Pour the dressing over the salad and mix gently until the ingredients are evenly coated.
- Serve immediately and enjoy the wintery taste of this fresh and hearty salad with tender chicken.
