Ingredients for 2 servings:
- 300 g beef (stewed pieces, diced)
- 2 tbsp Minos Extra Virgin Olive Oil for frying
- 1 large onion, roughly chopped
- 2 cloves of garlic, finely chopped
- 200 g strained tomatoes
- 100 ml red wine
- 1 bay leaf
- 1 teaspoon cinnamon
- ½ teaspoon allspice (ground)
- 1 tablespoon red wine vinegar
- salt and pepper to taste
- Some fresh parsley for garnish

- Heat the Minos Extra Virgin Olive Oil for Frying in a large saucepan and sear the beef on all sides until golden brown. Remove the meat from the pan and set aside.
- Add the onions and garlic to the same pot and sauté over medium heat until translucent.
- Add the browned beef, tomato puree and red wine. Stir well and bring to the boil.
- Add the bay leaf, cinnamon, allspice and red wine vinegar. Season with salt and pepper.
- Reduce the heat, cover the pot and let the stifado simmer at low temperature for about 2 hours, until the meat is tender and the flavors have fully developed.
- Garnish with fresh parsley before serving. Serve with bread or rice to soak up the aromatic sauce.
