Ingredients for 2 servings:
- 10 zucchini flowers
- 100 g feta cheese
- 1 small onion, finely chopped
- 1 small tomato, diced
- 1 tbsp fresh mint, chopped
- Salt and pepper to taste
- Minos extra virgin olive oil for frying
Preparation:

Preparation time: 45 minutes
- Wash the zucchini flowers carefully and remove the inner pistil. Let them drain well.
- Crumble the feta cheese into a bowl and mix it with the chopped onion, tomato and mint. Season the mixture with salt and pepper.
- Carefully fill each zucchini flower with the feta mixture, twisting the tips of the petals together to enclose the filling.
- Heat a frying pan with a little Minos extra virgin olive oil over medium heat. Fry the stuffed zucchini flowers until golden brown on all sides, about 8-10 minutes. Remove from the pan and drain on kitchen paper.
