Ingredients for 2 servings:
- 4 slices of wholemeal bread
- 1 ripe avocado
- 200g colorful cherry tomatoes
- 2 spring onions
- A few leaves of lettuce or romaine lettuce
- Salt and freshly ground pepper to taste
- Fresh dill sprigs for garnish
- 2 tbsp Minos organic extra virgin olive oil for drizzling

Preparation time: 15 minutes
- Toast the 4 slices of whole wheat bread until crispy.
- Peel and pit the ripe avocado, cut it into thin slices and distribute it evenly on the toasted bread slices.
- Wash a few leaves of lettuce or romaine lettuce, dry them and place them on the avocado.
- Wash the 200g of colorful cherry tomatoes and cut them into thick slices or halve them.
- Distribute the tomatoes on the slices of bread.
- Wash the 2 spring onions and cut them into thin rings. Sprinkle them over the tomatoes.
- Season the bruschetta with salt and freshly ground pepper to taste.
- Garnish with fresh dill sprigs and drizzle each bruschetta with some Minos Organic Extra Virgin Olive Oil .
Tip: You can also fry the bread in a pan with a little Minos extra virgin olive oil and then rub it with fresh garlic.
