Ingredients for 2 people:
- 1 small head of lettuce, washed and finely chopped
- 10 small tomatoes, halved
- 1 tsp black sesame seeds
- 30 g Parmesan, shaved or grated
- 1/2 orange, cut into thin slices (for decoration)
- 2 tbsp Minos Extra Virgin Olive Oil for salads
- Juice of half an orange
- 1 tsp Dijon mustard
- 1 tsp honey
- Salt and pepper to taste
For the toasted baguette slices:
- 8 slices of baguette
- 4 tbsp Minos Extra Virgin Olive Oil for frying
- 2 garlic cloves, finely chopped or grated
- 8 Minos Organic Kalamata Olives without Stone
- 1 tsp dried oregano
- Salt and pepper to taste
Preparation:
Preparation time: approx. 30 minutes
Difficulty level: easy
- Preheat the oven to 180°C.
- Finely chop or grate the garlic and mix it with the Minos Extra Virgin Olive Oil for frying .
- While the garlic oil is brewing, prepare the salad. Chop the lettuce, halve the tomatoes and grate or grate the Parmesan cheese.
- Mix the lettuce, halved tomatoes and black sesame seeds well in a large bowl.
- Generously spread the garlic-oil mixture on each of the 8 baguette slices.
- Place one Minos Organic Kalamata olive without pits on each baguette slice.
- Place the baguette slices on a baking sheet and toast them in the preheated oven for about 8-10 minutes, until golden brown and crispy.
- While the bread is in the oven, prepare the dressing by stirring the juice of half an orange, Dijon mustard and honey in a small bowl until well combined.
- To obtain a creamy dressing, stir continuously while slowly adding the Minos Extra Virgin Olive Oil for Salads in a thin stream. This will help to emulsify the oil and juice and achieve a uniform consistency.
- Add salt and pepper to taste and mix well.
- After the bread is toasted, remove it from the oven and carefully place it on a platter or plate.
- Pour the prepared dressing over the salad and stir gently until the salad is evenly coated with dressing.
- Divide the salad between 2 plates and sprinkle with grated or shaved Parmesan cheese.
- Decorate the salad with thin slices of orange.
- Serve the salad and toasted bread slices immediately and enjoy your light meal.
