Greek oven-baked vegetables with feta

In Greece, this dish is most often served as a main course, especially during the warm spring and summer months. It is perfect for a relaxed meal outdoors with family and friends. Serve with a glass of Greek wine and a fresh salad - simply irresistible!

Ingredients for 2 people:

  • 200g couscous (or bulgur)
  • 2 courgettes
  • 1 red pepper
  • 100g green asparagus
  • 1 onion
  • 2 tomatoes
  • Minos extra virgin olive oil
  • 100g feta
  • Salt, pepper, oregano, thyme (to taste)

Preparation:

Difficulty level: easy

Preparation time: approx. 40 minutes

  1. Preheat the oven to 200°C.
  2. Cut the zucchini, red pepper, green asparagus, onion and tomatoes into bite-sized pieces.
  3. Spread the vegetables on a baking tray and drizzle generously with Minos extra virgin olive oil . Season with salt, pepper, oregano and thyme.
  4. Roast the vegetables in the oven for about 20-25 minutes, until soft and lightly browned.
  5. In the meantime, prepare the couscous or bulgur according to the instructions on the package.
  6. When the vegetables are ready, serve them on plates with the couscous or bulgur. Crumble the feta over the top and top with a little Minos extra virgin olive oil .
