Oven-baked sardines with potatoes and tomatoes

The Greeks love this dish, especially in the cooler seasons when you fancy something hearty but healthy. Oven-baked sardines are rich in omega-3 fatty acids and go perfectly with a glass of white wine or a fresh salad. This recipe brings the taste of Greek cuisine to your home - simple, rustic and full of Mediterranean flavors.

Ingredients for 2 servings:

  • 400 g fresh sardines (boned and cleaned)
  • 300 g potatoes
  • 2 tomatoes
  • 1 small onion
  • 2 cloves of garlic
  • 4 tbsp Minos ORGANIC extra virgin olive oil
  • 1 teaspoon oregano (dried)
  • 1 teaspoon thyme
  • juice of half a lemon
  • salt and pepper to taste


Preparation:

Preparation time: 50 minutes

  1. Preheat the oven to 200 °C. Peel the potatoes and cut them into thin slices. Also cut the tomatoes and onion into slices.
  2. Place the potato slices in a baking dish and distribute the tomato slices and onions over them. Season everything with salt, pepper, oregano and thyme. Pour 2 tablespoons of Minos ORGANIC extra virgin olive oil over the vegetables and mix well.
  3. Rub the sardines inside and out with a little salt and pepper. Place them on top of the vegetables in the dish. Crush the garlic, mix it with the remaining Minos ORGANIC extra virgin olive oil and drizzle the mixture over the sardines.
  4. Bake the dish in the oven for 35-40 minutes, until the potatoes are cooked and the sardines are crispy. Just before serving, drizzle the lemon juice over the sardines.
  5. Serve the dish directly from the casserole dish and enjoy it warm with fresh white bread or a green salad.
