This Chicken Kritharaki Casserole is a wonderful combination of juicy roasted chicken pieces and delicious Mediterranean Kritharaki pasta, which tastes even better when braised in a delicious tomato sauce. It is creamy, flavorful, and promises a wonderful eating experience.
Ingredients:
- 500 g chicken breast fillet
- 300 ml strained tomatoes
- 300g Minos Kritharaki (rice noodles made from durum wheat semolina)
- 150-200ml Minos Extra Virgin Olive Oil
- 1 onion
- 1 garlic clove
- 1 tbsp butter
- 1 bay leaf
- 1 jar of Greek feta cubes with dried tomatoes
- Salt & Pepper
Preparation:

- Preheat oven to 190 degrees.
- Chop the onion and garlic into small pieces and put them together with a spoonful of water in a large pot. Let it cook briefly.
- Add the olive oil immediately after the water has evaporated. As soon as the oil is hot, put the meat in the pan and fry it well on all sides.
- Then add salt, pepper, bay leaf and about 400ml water and let everything cook for 15-20 minutes.
- In another pot, bring water with a little salt to the boil and cook the kritharaki in it for about 7 minutes. Meanwhile, add the pureed tomatoes to the meat and let them simmer.
- Put the pieces of meat and the sauce in a casserole dish. Place the kritharaki on top. Mix everything well and add enough cooking water until the pasta is completely covered with water. Then put the butter on top.
- Place the casserole dish in the preheated oven for about 30 minutes. Then take the casserole out of the oven and let it rest for a while.
Sprinkle with feta cubes if desired and enjoy.
