Ingredients:
- 1 large apple, peeled, cored and cut into thin slices

- 1 cup sugar
- 1/2 cup Minos extra virgin olive oil
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/2 cup chopped walnuts

- Preheat your oven to 180 degrees Celsius. Lightly grease a round cake tin (approx. 26 cm diameter) and line the bottom of the tin with baking paper.
- In a large bowl, beat together the sugar and Minos olive oil until well combined.
- Add the eggs and continue beating until well incorporated. Then add the vanilla extract and mix.
- In a separate bowl, sift the flour, baking powder, salt, cinnamon and ground cloves. Then gradually stir these dry ingredients into the egg and sugar mixture until well combined.
- Fold the chopped walnuts and apple cubes into the dough.
- Pour the batter into the prepared cake pan and distribute the apple slices evenly over the batter. Press the apple slices lightly into the batter so that they are visible after baking.
- Bake the cake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan before carefully placing it on a serving plate.
