Souvlaki plays a prominent role in the Greek culinary tradition. Ingredients for 3-4 people:
- 500 g lamb or pork, cut into cubes of about 2 cm
- Juice of 1 lemon
- 3 garlic cloves, chopped
- 2 tablespoons Minos organic extra virgin olive oil
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Wooden skewers soaked in water or metal skewers
- Optional: peppers, cut into 2cm pieces

- In a bowl, mix the lemon juice, chopped garlic, Minos Organic Extra Virgin Olive Oil , oregano, thyme, salt and pepper to make the marinade.
- Add the pieces of meat to the marinade and mix well to evenly coat the meat. Leave to marinate in the fridge for at least 2 hours, ideally overnight for a more intense flavor.
- Thread the marinated meat and the pepper pieces alternately onto the skewers.
- Preheat a grill pan or grill. Grill the souvlaki skewers for about 4-5 minutes on each side, or until the meat is cooked through and lightly browned.
- Remove the finished skewers from the grill and let them rest briefly, then serve, for example with pita bread, potato wedges, tzatziki, fresh vegetables and lemon wedges.
