The thickness of the pancakes makes every bite a fluffy feast. Serve hot and enjoy the taste of the Mediterranean. They go perfectly with a cup of Greek coffee or a glass of refreshing yogurt.
Ingredients for 2 people:
- 125 g flour
- 10 g baking powder
- A pinch of salt
- 1 egg
- 180 ml milk
- 30 ml Minos Organic Extra Virgin Olive Oil
- Minos Extra Virgin Olive Oil for Frying
- Greek honey
- Chopped walnuts
- Icing sugar
- Blueberry compote
Preparation:

- In a bowl, mix flour, baking powder and a pinch of salt.
- In a separate bowl, lightly beat the egg. Add milk and Minos Organic Extra Virgin Olive Oil . Mix thoroughly.
- Add the wet ingredients to the dry ingredients and stir gently until the batter is smooth. It's okay if there are some small lumps left.
- Preheat a frying pan to medium heat and lightly grease with Minos Extra Virgin Olive Oil for Frying . Add large portions of the batter to the pan to form thick pancakes. Fry until golden brown on both sides.
- Stack the pancakes on a plate and drizzle generously with Greek honey. Top with chopped walnuts (to taste), powdered sugar and a dollop of blueberry compote.
