Oven-baked vegetables with Greek feta cheese

Whether as a light meal during the week or as an impressive dinner for guests - oven-baked vegetables with Greek feta cheese are perfect for any occasion. Serve warm from the oven, accompanied by crusty bread or a crisp salad to experience the full flavor of this Mediterranean delicacy.

Ingredients for 2-3 people:

  • 2 blocks of Greek feta cheese
  • 1 red pepper
  • 1 yellow pepper
  • 1 green zucchini
  • 6-8 pickled hot peppers
  • a handful of stuffed green olives with almonds
  • 10-12 small tomatoes, halved
  • fresh basil leaves
  • 3-4 tablespoons Minos olive oil (plus more for drizzling)
  • oregano
  • Salt and pepper to taste

Preparation:

Preparation time: approx. 45 minutes including 25 minutes baking time
Difficulty level: easy

  1. Preheat the oven to 200 degrees Celsius (fan oven).
  2. Halve the peppers, remove the seeds and cut into small pieces. Cut the zucchini into thin slices.
  3. Carefully remove the feta cheese from the packaging and let it drain.
  4. In a large bowl, combine the prepared vegetables, halved tomatoes, peppers and stuffed olives . Drizzle with 3-4 tablespoons of olive oil and mix well to ensure the vegetables are evenly coated with oil. Season with salt, pepper and oregano to taste. Chop a few basil leaves and add to the vegetables. Mix everything well again.
  5. Lightly grease a baking dish with olive oil and spread the vegetables evenly over the bottom.
  6. Carefully place the feta cheese on the bed of vegetables.
  7. Place the baking dish in the preheated oven and bake for about 20-25 minutes, until the vegetables are soft and the feta cheese is lightly browned.
  8. Remove the casserole dish from the oven. Allow to cool slightly before serving and drizzle with additional Minos olive oil .
  9. Divide the dish between plates and garnish with fresh basil. Serve warm and enjoy!
