Whether as a light meal during the week or as an impressive dinner for guests - oven-baked vegetables with Greek feta cheese are perfect for any occasion. Serve warm from the oven, accompanied by crusty bread or a crisp salad to experience the full flavor of this Mediterranean delicacy.
Ingredients for 2-3 people:
- 2 blocks of Greek feta cheese
- 1 red pepper
- 1 yellow pepper
- 1 green zucchini
- 6-8 pickled hot peppers
- a handful of stuffed green olives with almonds
- 10-12 small tomatoes, halved
- fresh basil leaves
- 3-4 tablespoons Minos olive oil (plus more for drizzling)
- oregano
- Salt and pepper to taste

Preparation time: approx. 45 minutes including 25 minutes baking time

- Preheat the oven to 200 degrees Celsius (fan oven).
- Halve the peppers, remove the seeds and cut into small pieces. Cut the zucchini into thin slices.
- Carefully remove the feta cheese from the packaging and let it drain.
- In a large bowl, combine the prepared vegetables, halved tomatoes, peppers and stuffed olives . Drizzle with 3-4 tablespoons of olive oil and mix well to ensure the vegetables are evenly coated with oil. Season with salt, pepper and oregano to taste. Chop a few basil leaves and add to the vegetables. Mix everything well again.
- Lightly grease a baking dish with olive oil and spread the vegetables evenly over the bottom.
- Carefully place the feta cheese on the bed of vegetables.
- Place the baking dish in the preheated oven and bake for about 20-25 minutes, until the vegetables are soft and the feta cheese is lightly browned.
- Remove the casserole dish from the oven. Allow to cool slightly before serving and drizzle with additional Minos olive oil .
- Divide the dish between plates and garnish with fresh basil. Serve warm and enjoy!
