Vegetable soup

This soup is more than just a simple dish. It is perfect for cozy evenings at home or as a hearty starter for a winter dinner with friends.

Ingredients for 2 people:

Difficulty level: easy

  1. Heat the Minos extra virgin olive oil in a pan for frying and briefly sauté the chopped garlic in it.
  2. Add the chopped onion and fry until soft.
  3. Add celery, cherry tomatoes, cabbage and carrots. Sauté everything for about 5 minutes until the vegetables are slightly soft.
  4. Pour in the vegetable stock and add the bay leaf. Bring the soup to a boil and then reduce the heat. Let it simmer for about 15-20 minutes until the vegetables are tender throughout.
  5. Season with salt and pepper. Remove the bay leaf.
  6. Garnish with fresh parsley and a drizzle of Minos Organic Extra Virgin Olive Oil before serving.

Tip: Top the soup with some grated feta or kefalotyri cheese for extra flavor. It tastes great with freshly baked bread.
