Greek Farmer’s Salad (Horiatiki)

The Greek farmer's salad, also called Horiatiki, is a classic summer dish in Greece. It is often enjoyed as a starter or light main course and goes well with grilled meat or fish. Ideal for hot days and convivial evenings!

Ingredients for 2 servings:

Preparation time: 15 minutes

  1. Place the tomatoes, cucumbers, onion rings and peppers in a large bowl.
  2. Add the Minos organic pitted green olives .
  3. Drizzle Minos extra virgin olive oil for salads and red wine vinegar over the ingredients and season with salt, pepper and dried oregano.
  4. Mix everything well to allow the flavors to combine.
  5. Divide the salad evenly between two bowls or serving platters.
  6. Place a piece of feta on each portion.
  7. Sprinkle the feta with the capers (if using) and some dried oregano.
  8. Drizzle Minos extra virgin olive oil for salads over the feta.
  9. Serve the salad immediately, preferably with fresh bread.
