Ingredients for 2 servings:
- 2 large tomatoes, cut into large pieces
- 1/2 cucumber, sliced
- 1 small red onion, cut into thin rings or wedges
- 1 green or red pepper, cut into half rings
- 50 g Minos organic green olives without stones
- 200 g feta, divided into two pieces
- 1 tbsp capers (optional)
- 3 tbsp Minos extra virgin olive oil for salads
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste

Preparation time: 15 minutes
- Place the tomatoes, cucumbers, onion rings and peppers in a large bowl.
- Add the Minos organic pitted green olives .
- Drizzle Minos extra virgin olive oil for salads and red wine vinegar over the ingredients and season with salt, pepper and dried oregano.
- Mix everything well to allow the flavors to combine.
- Divide the salad evenly between two bowls or serving platters.
- Place a piece of feta on each portion.
- Sprinkle the feta with the capers (if using) and some dried oregano.
- Drizzle Minos extra virgin olive oil for salads over the feta.
- Serve the salad immediately, preferably with fresh bread.
