Ingredients for 2 servings:
- 4 slices of bread (e.g. baguette or ciabatta)
- 150 g goat’s cheese
- 200 g cherry tomatoes, cut into quarters
- 2 tbsp Minos organic extra virgin olive oil
- 1 garlic clove, halved
- 1 tbsp fresh basil, chopped
- Salt and pepper to taste
- 1 tsp Minos balsamic vinegar with honey (optional)

Preparation time: 20 minutes
- Toast the bread slices in a pan until golden brown and crispy.
- Rub the toasted bread slices with the cut side of the halved garlic clove.
- Spread each slice of bread generously with goat's cheese.
- Place the quartered cherry tomatoes in a bowl and mix them with Minos Organic Extra Virgin Olive Oil , chopped basil, salt and pepper. Optionally, you can also add the Minos Balsamic Vinegar with Honey .
- Spread the tomato mixture evenly over the bread slices.
- Serve the bruschetta immediately so that the bread stays crispy.
