  • 2 tbsp Minos Extra Virgin Olive Oil for frying
  • 1 large onion, roughly chopped
  • 2 cloves of garlic, finely chopped
  • 200 g strained tomatoes

  • Some fresh parsley for garnish

Preparation:

  1. Heat the Minos Extra Virgin Olive Oil for Frying in a large saucepan and sear the beef on all sides until golden brown. Remove the meat from the pan and set aside.
  2. Add the onions and garlic to the same pot and sauté over medium heat until translucent.
  3. Add the browned beef, tomato puree and red wine. Stir well and bring to the boil.
  4. Add the bay leaf, cinnamon, allspice and red wine vinegar. Season with salt and pepper.
  5. Reduce the heat, cover the pot and let the stifado simmer at low temperature for about 2 hours, until the meat is tender and the flavors have fully developed.
  6. Garnish with fresh parsley before serving. Serve with bread or rice to soak up the aromatic sauce.
