Ingredients for 2 servings:
For the zucchini fritters:
- 2 medium-sized zucchini
- 1 small onion
- 1 garlic clove
- 1 egg
- 50 g feta cheese
- 4 tbsp flour
- 2 tbsp chopped parsley
- Salt and pepper to taste
- Minos extra virgin olive oil for frying
For the tzatziki:
- 200 g Greek yoghurt
- 1 small cucumber
- 1 garlic clove
- 1 tbsp Minos organic extra virgin olive oil
- 1 tsp lemon juice

- Grate the zucchini coarsely and squeeze out the excess liquid. Grate the onion and garlic as well.
- Mix the grated zucchini, onion and garlic in a bowl. Add the egg, crumbled feta cheese, flour and chopped parsley. Season with salt and pepper.
- Heat the Minos extra virgin olive oil in a frying pan. Form small balls or flat fritters from the zucchini mixture and fry them over medium heat until golden brown and crispy. Place the finished fritters on kitchen paper to drain off the excess oil.
- For the tzatziki, grate the cucumber and squeeze out any excess liquid. Mix the grated cucumber with the Greek yogurt, crushed garlic, Minos organic extra virgin olive oil and lemon juice. Season with salt to taste.
- Serve the zucchini fritters warm with the tzatziki and enjoy.
