Greek Pancakes

The thickness of the pancakes makes every bite a fluffy feast. Serve hot and enjoy the taste of the Mediterranean. They go perfectly with a cup of Greek coffee or a glass of refreshing yogurt.

Ingredients for 2 people:

Preparation time: approx. 30 minutes

Difficulty level: easy

    1. In a bowl, mix flour, baking powder and a pinch of salt.
    2. In a separate bowl, lightly beat the egg. Add milk and Minos Organic Extra Virgin Olive Oil . Mix thoroughly.
    3. Add the wet ingredients to the dry ingredients and stir gently until the batter is smooth. It's okay if there are some small lumps left.
    4. Preheat a frying pan to medium heat and lightly grease with Minos Extra Virgin Olive Oil for Frying . Add large portions of the batter to the pan to form thick pancakes. Fry until golden brown on both sides.
    5. Stack the pancakes on a plate and drizzle generously with Greek honey. Top with chopped walnuts (to taste), powdered sugar and a dollop of blueberry compote.
