This soup is more than just a simple dish. It is perfect for cozy evenings at home or as a hearty starter for a winter dinner with friends.
Ingredients for 2 people:
- 2 tbsp Minos extra virgin olive oil for frying
- 2 garlic cloves, chopped
- 1 stick of celery, sliced
- 150 g cherry tomatoes, halved
- 100 g cabbage, cut into thin strips
- 1 large carrot, diced
- 1 small onion, finely chopped
- 1 litre vegetable stock
- 1 bay leaf
- Salt and pepper to taste
- A handful of fresh parsley, chopped
- Minos Organic Extra Virgin Olive Oil
Preparation:
Preparation time: approx. 40 minutes
Difficulty level: easy
- Heat the Minos extra virgin olive oil in a pan for frying and briefly sauté the chopped garlic in it.
- Add the chopped onion and fry until soft.
- Add celery, cherry tomatoes, cabbage and carrots. Sauté everything for about 5 minutes until the vegetables are slightly soft.
- Pour in the vegetable stock and add the bay leaf. Bring the soup to a boil and then reduce the heat. Let it simmer for about 15-20 minutes until the vegetables are tender throughout.
- Season with salt and pepper. Remove the bay leaf.
- Garnish with fresh parsley and a drizzle of Minos Organic Extra Virgin Olive Oil before serving.
Tip: Top the soup with some grated feta or kefalotyri cheese for extra flavor. It tastes great with freshly baked bread.
