Avocado-Tomato Bruschetta

In Greece, this bruschetta is particularly popular in summer as a light snack or starter. It goes well with a glass of chilled white wine and is perfect for relaxed evenings outdoors. The combination of creamy avocado and juicy tomatoes on crispy bread is simply irresistible and brings a piece of Mediterranean joie de vivre to your table.

Ingredients for 2 servings:

  • 4 slices of wholemeal bread
  • 1 ripe avocado
  • 200g colorful cherry tomatoes
  • 2 spring onions
  • A few leaves of lettuce or romaine lettuce
  • Salt and freshly ground pepper to taste
  • Fresh dill sprigs for garnish
  • 2 tbsp Minos organic extra virgin olive oil for drizzling

Preparation:

Difficulty level: easy

Preparation time: 15 minutes

  1. Toast the 4 slices of whole wheat bread until crispy.
  2. Peel and pit the ripe avocado, cut it into thin slices and distribute it evenly on the toasted bread slices.
  3. Wash a few leaves of lettuce or romaine lettuce, dry them and place them on the avocado.
  4. Wash the 200g of colorful cherry tomatoes and cut them into thick slices or halve them.
  5. Distribute the tomatoes on the slices of bread.
  6. Wash the 2 spring onions and cut them into thin rings. Sprinkle them over the tomatoes.
  7. Season the bruschetta with salt and freshly ground pepper to taste.
  8. Garnish with fresh dill sprigs and drizzle each bruschetta with some Minos Organic Extra Virgin Olive Oil .

Tip: You can also fry the bread in a pan with a little Minos extra virgin olive oil and then rub it with fresh garlic.
