Preparation time: approx. 10 minutes

  1. Wash the asparagus and remove any woody ends if necessary.
  2. Cook the asparagus in a pot of boiling salted water for 2-3 minutes until al dente.
  3. Beat the eggs with a little salt and pepper and whisk.
  4. Drain the olives and cut into slices.
  5. Heat the olive oil in a pan and add the eggs.
  6. Once the omelette has turned slightly brown on the bottom, flip the omelette.
  7. While the other side is browning, add the feta cheese.
  8. When the bottom has turned slightly brown, place the asparagus spears and olive slices on the omelette and roll it up.
  9. Serve on a plate and enjoy.
