The stuffed mini peppers not only taste good - they also look very pretty and are an excellent side dish to Mediterranean dishes.
Ingredients:
- 8 mini peppers
- 1 mozzarella
- 50 g feta cubes with dried tomatoes
- thyme
- Salt & Pepper
- 2 tbsp Minos Extra Virgin Olive Oil

- Carefully cut out the stem of the mini peppers. Use a small knife or spoon to remove the seeds from the pods through the slit. If you then rinse the peppers under running water, you should be able to remove the remains.
- Dry the pods well.
- Dice the mozzarella very finely and crumble the feta.
- Mix the different cheeses with salt, pepper and thyme to form a moldable mass.
- Now fill the peppers with this mixture. The cheese must not ooze out.
- Now heat the Minos Extra Virgin Olive Oil . The peppers are fried all over over high heat.
- Turn down the heat and continue to fry for about 10 minutes, turning occasionally, until the pods are soft but still have a bite.
The mini peppers taste best warm with good white bread toasted in Minos Extra Virgin Olive Oil . They are also ideal as a side dish to meat dishes and salads.
Our tip: Let the peppers cool down and mix them together with Kalamata olives and green olives . Add some fresh thyme and a good Minos extra virgin olive oil and you have the perfect finger food.
