This delicious and easy tomato ricotta toast recipe combines the freshness of tomatoes and creamy ricotta, perfectly combined with Minos ORGANIC Kalamata olives and refined with Minos Extra Virgin Olive Oil for salads . Perfect as a healthy lunch or light starter.
Ingredients:
- 4 slices of wholemeal bread or sourdough bread
- 200g ricotta
- 2 tomatoes, sliced
- 10-12 Minos ORGANIC Kalamata olives , sliced
- 2 tbsp Minos Extra Virgin Olive Oil for salads
- Fresh thyme sprig or other fresh herbs
- salt and pepper to taste
- Black sesame seeds (optional, for sprinkling)
Preparation:
- Lightly toast the bread slices until golden brown and crispy.
- Spread the ricotta evenly over the toasted bread slices.
