Our Greek Fan Potatoes are perfect as a hearty main meal or as a tempting side dish to your favourite dishes. Serve them with a fresh salad for a light dinner or combine them with grilled meat or fish for a full-flavoured feast. Whether you enjoy them alone or share with friends and family, these potatoes are a real treat.
Ingredients for 2 people:
- 4 mainly waxy potatoes
- 2-3 garlic cloves, finely chopped (optional)
- 4-5 tablespoons Minos olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- fresh rosemary
- Salt and pepper to taste
- 1 lemon (optional, for serving)

Preparation time: approx. 20 minutes including 45-50 min. baking time

- Preheat the oven to 200 degrees Celsius (fan oven).
- Wash the potatoes thoroughly with hot water and a vegetable brush and pat dry. Use a sharp knife to make several thin cuts in the potatoes, but do not cut all the way through. The potatoes should still be connected at the bottom.
- Optional: Distribute the chopped garlic evenly into the cuts in the potatoes.
- In a small bowl, mix the olive oil with the dried oregano, thyme, salt and pepper.
- Place the potatoes in a baking dish. Drizzle with the prepared olive oil and spice mixture so that it penetrates well into the cuts and is distributed over the potatoes. Spread a few fresh rosemary needles on the potatoes.
- Bake the potatoes in the preheated oven for about 45-50 minutes until golden brown and crispy. The exact baking time depends on the size of the potatoes; you can test whether they are done with a knife.
- Divide the fan potatoes between plates and serve with a salad or vegetables of your choice. You can also serve with Greek yogurt or tzatziki as a dip.
Tip: Add lemon wedges to drizzle over the potatoes for an additional fresh flavor.
