Ingredients for 2 people:
- 200g couscous (or bulgur)
- 2 courgettes
- 1 red pepper
- 100g green asparagus
- 1 onion
- 2 tomatoes
- Minos extra virgin olive oil
- 100g feta
- Salt, pepper, oregano, thyme (to taste)

Preparation time: approx. 40 minutes
- Preheat the oven to 200°C.
- Cut the zucchini, red pepper, green asparagus, onion and tomatoes into bite-sized pieces.
- Spread the vegetables on a baking tray and drizzle generously with Minos extra virgin olive oil . Season with salt, pepper, oregano and thyme.
- Roast the vegetables in the oven for about 20-25 minutes, until soft and lightly browned.
- In the meantime, prepare the couscous or bulgur according to the instructions on the package.
- When the vegetables are ready, serve them on plates with the couscous or bulgur. Crumble the feta over the top and top with a little Minos extra virgin olive oil .
