This recipe for "Thalassina me Kritharaki" is a classic Greek dish that perfectly combines the fresh flavors of seafood with the hearty rice noodles.
Ingredients for 2-3 people:
- 500 g seafood (e.g. shrimp, mussels, squid)
- 300 ml strained tomatoes
- 300 g Kritharaki (rice noodles made from durum wheat semolina)
- 150‑200 ml Minos Extra Virgin Olive Oil
- 1 onion
- 1 garlic clove
- 1 tbsp butter
- 1 bay leaf
- 1 jar of Greek feta cubes with dried tomatoes
- Salt & Pepper
- fresh parsley
Preparation:

- Chop the onion and garlic and put them in a large pot with a spoonful of water and let them cook.
- Immediately after the water has evaporated, add the olive oil and butter and heat over medium heat until the onions are nice and translucent.
- Add the seafood and fry for a few minutes on all sides until lightly browned.
- Add salt, pepper, bay leaf and about 400ml water and cook for 15‑20 minutes.
- Cook the rice noodles (kritharaki) according to the instructions on the package with a little salt for about 7 minutes. Drain and set aside.
- Add the pureed tomatoes to the seafood. Reduce the heat and let the sauce simmer for about 10-15 minutes to allow the flavors to meld.
- Add the cooked rice noodles (kritharaki) to the seafood in the pan and mix well to allow them to absorb the sauce. Simmer for another 5-10 minutes until the noodles are al dente.
- Remove the pan from the heat and sprinkle the feta cubes with dried tomatoes over the seafood and pasta. Garnish with fresh parsley.
- Serve the dish warm and enjoy!
