Mediterranean salad with roasted garlic baguette and orange dressing

This refreshing Greek salad with toasted white bread is perfect for a light lunch or dinner for two. The orange juice dressing gives the salad a fruity note, while the parmesan and toasted white bread slices add extra flavor and crunch.

Ingredients for 2 people:

  • 1 small head of lettuce, washed and finely chopped
  • 10 small tomatoes, halved
  • 1 tsp black sesame seeds
  • 30 g Parmesan, shaved or grated
  • 1/2 orange, cut into thin slices (for decoration)

Preparation:

Preparation time: approx. 30 minutes

Difficulty level: easy

    1. Preheat the oven to 180°C.
    2. Finely chop or grate the garlic and mix it with the Minos Extra Virgin Olive Oil for frying .
    3. While the garlic oil is brewing, prepare the salad. Chop the lettuce, halve the tomatoes and grate or grate the Parmesan cheese.
    4. Mix the lettuce, halved tomatoes and black sesame seeds well in a large bowl.
    5. Generously spread the garlic-oil mixture on each of the 8 baguette slices.
    6. Place one Minos Organic Kalamata olive without pits on each baguette slice.
    7. Place the baguette slices on a baking sheet and toast them in the preheated oven for about 8-10 minutes, until golden brown and crispy.
    8. While the bread is in the oven, prepare the dressing by stirring the juice of half an orange, Dijon mustard and honey in a small bowl until well combined.
    9. To obtain a creamy dressing, stir continuously while slowly adding the Minos Extra Virgin Olive Oil for Salads in a thin stream. This will help to emulsify the oil and juice and achieve a uniform consistency.
    10. Add salt and pepper to taste and mix well.
    11. After the bread is toasted, remove it from the oven and carefully place it on a platter or plate.
    12. Pour the prepared dressing over the salad and stir gently until the salad is evenly coated with dressing.
    13. Divide the salad between 2 plates and sprinkle with grated or shaved Parmesan cheese.
    14. Decorate the salad with thin slices of orange.
    15. Serve the salad and toasted bread slices immediately and enjoy your light meal.
