This colorful and rich Greek salad bowl offers a perfect mix of fresh vegetables, crunchy olives, sweet figs and savory chickpeas. The creamy dressing made from Minos olive oil and Greek yogurt gives the whole thing a Mediterranean touch. Perfect as a healthy meal for lunch or dinner!
Ingredients for 2 people:
- 1 cucumber, diced
- 2 tomatoes, diced
- A handful of Minos ORGANIC green olives without stones
- 1/2 cup edamame (cooked and peeled)
- 2-3 fresh figs, sliced
- A handful of rocket
- 2 pita breads, torn into pieces
- 1 cup chickpeas
- Cumin, oregano, a pinch of paprika powder and a pinch of garlic powder
- 1 splash of Minos olive oil for frying
- 2 tablespoons Greek yogurt
For the dressing:
- 3-4 tablespoons Minos ORGANIC olive oil
- Juice of half a lemon
- Salt and pepper to taste
- Fresh chopped herbs such as parsley or oregano (optional)

- Dry the chickpeas thoroughly to ensure they become crispy when roasted.
- Mix cumin, oregano, a pinch of paprika and a pinch of garlic powder with a small drizzle of Minos olive oil for frying . Pour the spice mixture over the dry chickpeas and fry them in a pan over medium heat until golden brown and crispy.
- Set the chickpeas aside to cool.
- Now prepare the dressing by mixing the Minos ORGANIC olive oil , lemon juice, salt, pepper and fresh chopped herbs if desired in a small bowl.
- Briefly toast the pita bread pieces in a pan without oil until they are crispy.
- Arrange the salad ingredients decoratively in two large bowls and spread the dressing evenly over them.
- Add a generous spoonful of Greek yogurt to each salad bowl or serve as a dip.
- Serve the Greek salad bowl and enjoy!
