Baked feta with cherry tomatoes, olives and garlic is a delicious Greek dish that is perfect for a light lunch or as an evening appetizer. Greeks especially enjoy it in the summer months when the tomatoes are at their full ripeness. Serve it with fresh garlic baguette to perfectly soak up the flavorful olive oil and melted feta.

Ingredients for 1-2 servings:

Preparation time: 25 minutes

  1. Preheat the oven to 200 °C.
  2. Place the cherry tomatoes, Minos Organic Kalamata Olives without Pits and Minos Organic Green Olives without Pits in a small baking dish.
  3. Season the tomatoes and olives with the chopped garlic, pepper and 4 tablespoons of Minos extra virgin olive oil for salads . Mix everything well.
  4. Make a hole in the middle of the baking dish and place the feta in it.
  5. Drizzle the feta with the remaining Minos extra virgin olive oil for salads .
  6. If you like, you can now sprinkle chili flakes over the feta.
  7. Spread rosemary and thyme evenly over the entire dish.
  8. Place the baking dish in the oven and bake for about 20 minutes, until the feta is soft and lightly golden brown.
  9. Serve the baked feta straight from the baking dish with crispy garlic baguette for dipping.
