Fish in creamy spinach sauce

This dish is a wonderful example of Greek cuisine and is often served as a light dinner or as part of a larger feast. It goes great with rice, potatoes or fresh bread and is perfectly complemented by a Greek farmer's salad.

Ingredients for 2 servings:

  • 2 fish fillets (e.g. cod or pollock)
  • Salt and pepper to season
  • 1 tbsp Minos extra virgin olive oil for frying
  • 1 small onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 100 g fresh spinach, roughly chopped
  • 100 ml cream
  • 50 g feta, crumbled
  • 1/2 tsp dried oregano
  • 1/2 lemon, sliced
  • Fresh parsley to garnish

Preparation:

Preparation time: 40 minutes

  1. Season the fish fillets with salt and pepper.
  2. Heat the Minos extra virgin olive oil for frying in a large skillet over medium heat.
  3. Fry the fish fillets in hot oil until golden brown on both sides (about 3-4 minutes per side).
  4. Remove the fish from the pan and set aside.
  5. In the same oil, fry the chopped onion and garlic until soft and fragrant (about 3 minutes).
  6. Add the chopped spinach to the pan and stir until it wilts.
  7. Add the cream and crumbled feta to the spinach.
  8. Sprinkle in oregano and mix well.
  9. Let the sauce simmer until it thickens slightly (about 5 minutes).
  10. Place the seared fish fillets back into the pan and coat them in the sauce.
  11. Cover the pan and let everything simmer for another 5-7 minutes to allow the fish to infuse and the flavors to combine.
  12. Arrange the fish on plates with the creamy spinach sauce and garnish with lemon slices and fresh parsley.
