Briám Bruschetta with Feta

"Briám" is a traditional Greek dish consisting of braised vegetables, often with tomatoes, eggplant, zucchini and other seasonal ingredients. Combining these flavors on crusty bread is a modern twist on this classic dish.

Our Briám Bruschetta with Feta is perfect as a starter or light dinner.

Ingredients for 2 people:

  • 4 slices of farmhouse bread or baguette
  • 2 large tomatoes, diced
  • 1 small eggplant, diced
  • 1 small zucchini, diced
  • 100 g Greek feta, crumbled
  • 1/4 red onion, finely chopped
  • Fresh basil leaves, chopped
  • 3-4 tablespoons Minos olive oil for frying
  • 2-3 tablespoons Minos olive oil for salads
  • Salt and pepper to taste

Preparation:

Preparation time: approx. 45 minutes including 25 minutes baking time
Difficulty level: easy

  1. Preheat the oven to 180 degrees Celsius (fan oven).
  2. Place the diced eggplant and zucchini on a baking tray, drizzle evenly with Minos olive oil for frying and season lightly with salt and pepper. Bake the vegetable cubes in the oven for about 15-20 minutes until soft and golden brown. Stir occasionally to ensure even cooking.
  3. While the vegetables are in the oven, place the diced tomatoes in a bowl and mix with chopped red onion, basil and about a tablespoon of Minos olive oil for salads . Season with salt and pepper.
  4. Remove the roasted eggplant and zucchini cubes from the oven and allow to cool slightly.
  5. Place the bread slices on a baking tray and toast in the oven for about 5-7 minutes until golden brown and crispy.
  6. Remove the toasted bread slices from the oven and arrange on a serving platter.
  7. Add the roasted eggplant and zucchini cubes to the tomato mixture and stir everything together.
  8. Spread the vegetable mixture evenly over the toasted bread slices.
  9. Sprinkle the crumbled Greek feta over our Briám Bruschetta and drizzle generously with Minos olive oil for salads .
  10. Serve immediately and enjoy the delicious flavors of Greek cuisine!
