There are two different manufacturing processes for obtaining olive oil: cold extraction and cold pressing. Cold pressing traditionally uses hydraulic presses in an open circuit. In order to bear the official designation "cold pressed" or "cold extracted", the temperature of the substances involved, such as olives, olive pulp and the olive-water mixture, must never exceed 27 °C during the entire processing.
